Le CÔNGO LIBANGA est un tubercule de la famille des aracées, dont la chair est moins farineuse que ses cousins le macabo et le taro. Il est plus tendre que le taro, ce qui rend son temps de cuisson moins long. Et plus dur que le macabo blanc. Sa cuisson est délicate, comme sa chair. Pour une parfaite cuisson éviter de le mettre en immersion dans l’eau. Il accompagnera parfaitement votre Jângô.  Bon Appétit.  N.B : Cette recette de  Jângo peut tout aussi s’accompagner de bekwan. (Macabo râpé) Guacamole, Legumes, Taro, Congo
