This tuna tartare is another inspiration from my trip to NYC. As a committed lemon admirer, it shouldn’t come as a surprise that I happen to love Meyer lemons. This recipe incorporates an array of flavors and crunch. If there is a time to try a tuna tartare recipe, this is the one. You can let it marinate for a couple of hours to overnight. Ingredients: - Yellowfin tuna - Meyer lemon (juice and zest) - Crème fraîche - Sea salt - Red pepper chili - Chives - Rice puffed cereal Instruction: I did not specify quantities, and that has to do with the amount of tuna you want to use. Roasted Tomato Bruschetta This is another great easy appetizer idea. Vegetarian and absolutely delicious. Ingredients: - Loaf of any crusty bread (I used Italian) - 1 large container of cherry tomatoes - 3 gloves of garlic minced - 1 cup of mozzarella cheese - 1/2 cup of grated pecorino Romano, or parmigiano Reggiano cheese - Olive oil - Salt and pepper Instructions: Preheat the oven to 400°F. Spray a cookie sheet with some olive oil cooking spray, then lay out the halved tomatoes and bake in the oven for about 15-18 minutes. Slice a large loaf of bread lengthwise into two pieces.
