RECIPE (1 serving, 15min prep time):
-1 Tbsp (15g) red curry paste
-100ml coconut milk
Let it simmer 3-4mins.
-200ml water
-1 Tsp light soy sauce
-juice of 1/2 lime
-a pinch of sugar
-a pinch of salt
Let it simmer while cooking your noodles.
-70g quick cooking noodles
Cook according to the package instructions.
-65g tofu puffs or normal tofu, cubed
Add to the broth and cook for 3-4mins.
For serving:
-fresh cilantro and mint
-crispy onions
-veggies if you want
Assemble everything in a bowl.
