Possibly The Best quinoa bowl ever! Start with cooked quinoa, top with fresh arugula, cubed cucumber, avocado, feta cheese; shrimp and roasted herbed chick peas. Oh, and yogurt ranch dressing drizzled on top. The chick peas were from a can, rinsed and tossed with olive oil, salt, pepper, curry, thyme, cumin; then broiled for about 20min for a nice crunchy crust on the outside.
