Vegan Pumpkin Pie: If you don't care about it falling apart a bit, skip the crust and double the filling. Other changes: *Only used 1/4c brown sugar and no maple syrup for the doubled batch. * Used 1 mashed banana and 10-12 chopped soaked dates to compensate for less sugar. *I always use a little extra of all the spices. *I made it "from scratch" (cut 1 pie pumpkin in half, poke skin, remove seeds, roast face down for 1 hour, scoop out and mash..makes about 3 c pumpkin puree)
