COLESLAW Carrots Cabbage Vegan mayo Sea salt TOFU Olive oil 1 can black beans 800g organic firm tofu Vegan cheese 1 tbsp smoked paprika 1 tbsp curry powder Sea salt 1 tbsp ginger powder Oregano Splash dark soy sauce 2 tbsp nutritional yeast Avocado Jollof rice (recipe on page) Mushroom suya spice (recipe on page) METHOD Squeeze out the excess water from the tofu and crumble. Mixing all the seasoning then add to a pan. Once it’s cooked down add the beans and cheese. Prepare the mushrooms suya and the coleslaw When building the burritos, feel free to leave the avocado and slaw out when freezing. I also toasted mine with vegan cheese with half of them, just to mix it up. by @davidolu_🌱
