Lemon and Blueberry Chia Pudding By Georginaelizat Since you guys loved my last chia pudding, here is a fresh, summery version. This is fruity, sweet and involves the best pairing ever - lemons and bluebs. A quick and easy breakfast or snack, which tastes like dessert. Ingredients Serves 2 1/2 cup / 86g chia seeds 2 tbsp maple syrup 1/2 tsp lemon or vanilla extract 1.5 cup / 325ml plant milk 1/2 lemon - juice and zest 1.5 cup / 310g vegan yoghurt 3/4 cup / 75g frozen blueberries Instructions 1. Combine your chia seeds, milk, maple syrup, extract, lemon zest + juice and 1 cup/ 230g yoghurt together. Leave to set for at least 2 hours, or overnight. 2. Put your frozen blueberries into a microwave for 1 minute, until they are fully defrosted and a sauce forms.
