We call this the " stealth muscle meal" because even your no lifting friends might like it. Might! Anyhow, since I posted breakfast and lunch then might as well do dinner. It is Sunday and back to grilled chicken, steak etc. so how did I make it ? Sauté 1/2 cup diced sweet onion, 1/2 cup diced red pepper, 1/2 cup diced sweet potato, 1/4 cup shiitake mushrooms, 3 crushed garlic cloves, 1/2 cup in extra virgin olive oil....get all golden brown and tender.
