I also made sweet potato chips for the first time today and they were delish! Peel a sweet potatoe, slice into thin pieces. Heat up 1/4 cup of coconut oil in a skillet. Add a few slices of sweet potato, when they start to curl at the edge and turn brown flip over and continue to cook for another minute or two. Place on a a cookie sheet and lightly salt. The thinner you can get them the better! Hubby and the kids loved them.
