C'est un pâtissier de Maisons-Laffitte, Louis Durand, inspiré par la course cycliste entre Paris-Brest-Paris créée en 1891, course pour laquelle le créateur Pierre Giffard lui demande de faire un gâteau en forme de roue de bicyclette, qui est à l'origine du gâteau en 1910[1].
