Here we have matcha cupcakes (which look kind of burned but they aren't) an apple some Brazil nuts a PowerBar steamed broccoli fried tofu raw carrot and bell pepper sticks and a white bean dip. I made all of this last night put it in the fridge and now I can just throw it in my bag and I'm good to go. Have a nice day peeps! Butter Bean Hummus: 30 oz caned butter beans, drained & skins removed if they are peeling 1 head Roasted Garlic, recipe follows, cloves squeezed from skins, 3/4 cup tahini. 4 tsp ground cumin, 2 tsp ground coriander, 1 tsp smoked paprika, 1/2 tsp cayenne pepper 1/2 cup EVOO, 1/2 cup lemon juice, Kosher salt & black pepper. Pita bread, pita chips or fresh vegetables, for serving. gm
